Filled with rosehip marzipan, sprinkled with rose sugar, and brushed with rose honey, this sweet swan is still in the experimental stage. I’m working on recipes for the spring edition of the Gather Victoria E-Cookery Book and this recipe is inspired by the ancient magic of baking bird-shaped buns to usher in spring. In Russia, Ukraine and many Slavic countries, “zhavoronki” or larks are baked on March 9th or March 22nd (depending on old world/new world calendars) to celebrate the return of the larks. These buns are tossed into the air while calling for the birds to fly back to their lands, bringing health, prosperity, good harvest and luck. I decided to pay tribute to the swan, another migratory harbinger of spring. For the Celts, the swan arrived with warmer weather and the first blossoms and the Goddess Brigid was said to take form as a swan. In ancient Greece, the swan was associated with the Goddess of Love Aphrodite, who travelled in a swan-drawn chariot. Roses of course were sacred to Aphrodite as were almonds, hence the rosehip marzipan (made from dried rose hips and rose sugar). I used a Ukrainian cream cheese pastry dough instead of yeast dough (as for the zhavoronki) and I'm hoping it will manifest into something delicious. The violets were just blooming here on Vancouver Island but sadly right now they are buried under a foot of snow. But just because I can't make my favourite Wild Violet Sugar Sweethearts - doesn't mean you can't! Beloved by the goddesses of love and beauty, Venus and Aphrodite, violet possesses one of the most romantic scents of the past 2000 years. And it has been used in love potions for just as long! All you need to indulge in her amatory magic is a handful of violet blossoms and half a cup of sugar whirred up in the food processor. No fussing, no cooking, no baking, no crystallizing or distilling, violet sugar can be sprinkled on practically anything (or even sinfully spooned directly into the mouth). I used a simple shortbread cookie which set off its seductive charms perfectly. Happy Valentine’s Day! In a culinary fusion of western and eastern goddess traditions, this Golden Rice Pudding is made with primrose infused cream and spiced with saffron, cardamom, orange zest and a touch of candied ginger. It is my offering to the Hindu Goddess Saraswati, Goddess of Wisdom, Learning and Art for her birthday (Vasant Panchami or Basant Panchami) falling this year on February 16th. Like Brigid the Celtic Goddess of Illumination, Inspiration and Poetry, this goddess of early spring brought blessings of fertility, prosperity and good health and her feast celebrated “the coming of the light”. Both Saraswati’s and Brigid’s "holy days" included not only plenty of golden sweet treats, lit candles and shining lamps but were preceded by ritual bathing and rigorous house cleaning. Wild Violet Syrup. The violet was once the original flower of Valentine’s Day, which is no surprise as in ancient Greece its aroma was said to “torment young men beyond endurance” and it was used by courtesans to scent their breath and erogenous zones. Affiliated with Venus and love from time immemorial, the violet (according to the American Violet Society) was the original official flower of Valentine’s Day – not the rose. Today the wild violet is considered a weed, a bane for those who cherish pristine lawns, but it once held a special place in every 19th-century garden, ornamental or kitchen. Cultivated in special frames to protect from inclement weather, violets were used to infuse wine, liqueurs, vinegar, sugar and ‘daynty sirrups’, custards, ‘Oriental Sherberts’ and chocolates. Today they have proven themselves in no need of cosseting as they have escaped domestication and grow profusely anywhere there is a damp patch of grass. This recipe for Brigid’s Magical Blackberry Scones with Bay Leaf Infused Custard Sauce might appear to be late (considering it is February 3rd) but I suggest it is right on time. After all, Imbolc or Imbolg, was originally a “moveable feast” determined not by fixed dates on the calendar but by shifting heavenly events, specifically the midpoint between the winter solstice and spring equinox. Which this year falls on February 3rd. And according to the Coligny Calendar (used by the continental Celts before being banned by the Romans), Brigit’s celebration was not only set by the moon – it occurred twice! The full moon was Brigit’s public holiday and the new moon was her “Holy Night”. This year the new moon occurs on Feb.11th – which means you’ve got nearly a week to make Magical Blackberry Scones for Brigit’s Holy Night. Now I love the communal camaraderie of celebrating a sacred event together on one single date - not to mention the energy of blessing it conjures - but I can’t help wondering if we are missing something important when we no longer observe Imbolc by its original cosmological alignments? Seems to me that when the old holy days once tied to the shifting heavens became fixed to dates on calendars, we effectively became unhinged from the natural cosmic rhythms which had guided our lives - and our magic -for millennia.
Brigid's Elderflower Flummery. While all things creamy & eggy are traditional Imbolc dishes, this year I decided to try a very old Celtic dish called Flummery. This sweet, soft, wobbly and boozy dessert was usually made by steeping oatmeal in water then ‘ boyling it to a thicke and stiffe jelly’. Often flavoured with rosewater, wine or spirits, it was served topped off with cream and honey. While I’ve never heard of it being associated particularly with Brigid, I’m convinced that one or two must have been made for her Feast Day. After all, from Ireland to Scotland to Wales, oatmeal was - and still is - almost a sacred food of its own!
Herb Infused Wassail Cider: A Magical Recipe For Blessing The Earth (and Ourselves). The word wassail is derived from both Old English (wases hael) and Old Norse (vest heil), and literally means “be healthy” “be you hale”, and it refers both to a mulled cider poured on the roots of apple trees to bless and nourish the orchards, and an actual toast drunk to ensure good health and good harvest.I love these ‘old ways’ of creating blessings for ourselves and the planet. Sourced in the understanding of our symbiotic relationship with mother nature, they symbolically express our gratitude for the fruits of the earth and our spiritual role in caring for the land.
So lucky here on Vancouver Island. Quick forage for supper greens yields tender baby cleaver, crow garlic, miners lettuce and dandelion. Always lush and plentiful in this paradise.
My beloved mother-in-law Rosie is Ukrainian and I love her stories about the old traditional Ukrainian Christmas. So this year I decided to brew up an old Ukrainian “cure all” called Uzvar. Considered one of the 12 most important dishes of Ukrainian Christmas (which falls on January 7th in Orthodox Christian tradition) it is made by stewing (decocoting) dried fruits and dried berries together - and adding a touch of honey for sweetening. Dried apples, pears, prunes, apricots, raisins, currants are often used as are wild fruits such as rosehips, hawthorn berries, bilberries (cranberry) and blackthorn. For this version I skipped the fruit and went just with dried berries along with dried rosehips, dried rose petals, a few juniper berries and a handful of elderflower blossoms. In Orthodox Christian tradition, Ukrainian Christmas falls on January 7th and is celebrated with a 12-course dinner. One of the 12 most important dishes was Uzvar, a “vitamin drink” made by stewing (decocting) dried fruits and dried berries together - and adding a touch of honey for sweetening. Packed full of vitamins, minerals and vital nutrients, Uzvar is considered a Ukrainian “cure-all”. Recipes vary wildly, dried apples, pears, prunes, apricots, raisins, currants are often used as are wild fruits such as rosehips, hawthorn berries, bilberries (cranberry) and blackthorn. Golden as the Sun, La Befana Cake. Epiphany Eve is the date of Twelfth Night (the end of Yuletide) a celebration of the rebirth of the sun. It was marked by plenty of round, sweet-spicy bread-like cakes enriched with dried fruit (and a splash of spirits). These circular cakes were symbolic of the growing light and associated with an ancient star or sun goddesses whose bright light brought an end to the darkest period and promised the coming of warmer longer days!
