One of the most versatile ways to indulge in the spicy sensual floral flavour of Magnolia is by infusing the blossoms in a simple syrup. Aside from making amazing cocktails (more on that later) or pouring over ice cream, there’s so many tasty ways to use this syrup. Here’s a really easy one. Behold a lush morning harvest! On my morning dog walk, I found baby horsetails (which I love in teas, bath and nourishing facial scrubs) our native red-flowering currant (which I infuse in honey and vodka for a lovely springtime elixir) dandelion blossoms (which will be tossed into vinegar) and finally some maple buds which will be eaten as an appetizer before dinner. I’m going to fritter them with a tempura batter and serve piping hot with soy and ginger sauce. THE TASTY TULIP: CHÈVRE CHEESE BALLS! From pale yellows, crimson reds, pumpkin oranges, deep purples, lustred pinks and snow-white, Vancouver Island is awash in the luminous colours of tulips! The most unsung of tulips many spring charms, however, is her edibility. With flavours and textures as diverse as her colours, her blooms offer not only a visual feast but many possibilities for a culinary one as well. Imagine sweet-ish lettuce that can be (depending on variety) fruity, floral or spicy with a texture ranging from buttery soft to crisp. All are suitable for sweet and savoury dishes from salads to desserts. So I’d thought it was a good time to post a couple of easy but oh so pretty recipes on the Gather Victoria website (shared from Gather Victoria Patreon.) With more than 3,000 naturally occurring and genetically cultivated varieties of the flower worldwide - you have plenty of tulips to choose from. One of the world’s most ancient plants, the ethereal, utterly sensuous blossoms of the Magnolia are sacred to Venus, who rules the house of Taurus. And in April, Magnolia x soulangeana erupts with edible creamy pink blossoms with an opalescent sea shell-like lustre and equally gossamer fragrance. My favourite way to capture its slightly spicy (some say gingery) floral flavour is by infusing the blossoms in a simple syrup. The result is an exquisite orangey rose coloured elixir with an incredible array of versatile uses from cocktails, desserts to baking.

HAPPY SPRING EQUINOX! Chirping birds and warmer lighter days, new shoots of green and the first blossoms. What's not to love? The landscape is alive with food, glorious food! And medicine! Here’s just a little of what I’ve gathered in the past few days; the very last of the vanilla-scented sticky cottonwood buds for oils, salves and honey, lots of the coconutty floral flavoured gorse for honey and teas, just a few of the fruity flowering red currant for flower essence, violets for extracts and elixirs and nettles to be dried and crumbled into salts, teas and smoothie powders. Many of you in response to my last posts on Gorse Blossoms asked if it was the same as the invasive Scotch Broom - no! Broom isn’t edible, has no scent or thorns. But if you’ve got Scotch Broom blooming near you why not craft one of the most hallowed objects of spring cleaning – the Besom. Not meant for everyday use, these magical tools are deeply rooted in the lore of the Vernal Equinox, a time to purify the home of stagnant energies and prepare it for the vitalizing energy of spring.
Right now Victoria's shoreways are awash in the bright yellow flowers of Gorse. Spreading along waterways and ocean bluffs, clinging to very edges of cliffs, her bright yellow velvety soft blossoms emit a coconutty vanilla-like scent long used in old-world cooking, spirits and confections. For these delectable Gorse Blossom Lemon Bars I infused the butter with Gorse blossoms and then used the butter in both the shortbread crust and the lemon curd filling. Sooo yummy.
